Jenabeth Peden

Probably the first thing Jenabeth Peden ever cooked was macaroni and cheese. Now when she makes it, she likes to add garlic and Tony Chachere’s, saying she likes spicy stuff. Her brother Broc asks her to make it for him, but he doesn’t like his spicy.

Her favorite foods are chicken spaghetti, her Mammie Jean Peden’s chicken and dressing, and her Nana Katie Jones’ chicken strips. And Jenabeth wants to learn to make all three of them. She likes mushrooms and plans to make a dish she saw on the internet using whole mushrooms and a butter sauce, and she also likes the chicken pasta at Harvey’s.

She was always sitting on the counter watching her mom cook before she could walk and now they enjoy cooking together during the summer.
Jenabeth discovered slime making on the internet and also saw on You Tube how to add color and glitter. Just something to play around with, she has several bags in the refrigerator in “every color of the rainbow,” her mother Lori said.

She makes the party dip a lot for family and friends, and besides dip, she and her friends make slime and come up with fingernail concoctions from Pinterest and You Tube to do in the kitchen. “She has ruined several good kitchen bowls mixing up fingernail top coat and eye shadows! And sometimes she adds glitter,” said her mother.

Jenabeth likes to make homemade ice cream sandwiches in which you put Cool Whip between two graham crackers, wrap in foil and freeze. “Our whole crew likes those,” Lori said, and Jenabeth agreed.
She mentioned watching  Kids’ Bake Off and Guy’s Grocery Game on Food Network, and her mom says they have a lot of Rachel Ray seasonings at their house.

Rose Mary Shelton’s beef stroganoff is one thing Jenabeth has made a good bit. Rose Mary boils sausage pizza topping and mixes it in and Lori says they usually just brown a tube of mild sausage to use.
Jenabeth likes to make strawberry cake mix cookies with powdered sugar.  Pinterest is probably where the idea for trying white cake mix and food coloring for cookies came from.  She and her mom also made some stuffed peppers she found on Pinterest.
“Sometimes it doesn’t work out and sometimes it does,” she said, but, “Blake (brother) and Dad will try anything!”

Party Dip
1 box  (18 oz.)  cake mix
1 1/2 cups plain yogurt
2 cups whipped topping
Sprinkles
In a large bowl, combine all ingredients and mix well until smooth and creamy. Chill at least one hour before serving with your favorite crackers or fruit. (My favorite is with Teddy Graham crackers.)

1 can cream of chicken soup
1 can cream of mushroom soup

Boil chicken in large pot of salted water. When chicken is done, remove from pot, keeping water/broth at a boil. Shred chicken and set aside.
Put spaghetti in boiling chicken broth and cook until done. When done, drain noodles and add cheese. Stir until all melted. Add remaining ingredients and cook in oven on 350°  for 20 minutes.

Beef Stroganoff

Pound  sausage  browned
Spaghetti noodles
Mix soup with cooked sausage until heated, then stir in cooked noodles.
