Betty Edwards of Slate Springs made butter roll every Monday morning for 12 years when she worked at Roscoe’s.
“It was everybody’s favorite,” she said. Her daughter, Janice, and husband, Randy Dye, owned Roscoe’s restaurant at that time.
On occasion, she cooks for Calhoun City Chamber of Commerce. One meal she prepared for them included grilled pork chops, baked cabbage and string beans.
She is a 13-year member of the Tri-Community Homemakers’ Club.

As a hostess usually in September, she has served them roast beef sliders, slaw, baked beans and potato salad, or barbeque with all the sides.
She entered Fried Stuffed Deer in the Wildlife Tasting Dinner in 2012 and was named Overall Champion.
She has also cooked in people’s homes when she was sitting with them.
“We cook simple (now) and eat out a lot” since it’s just the two of them, she said.

Betty EdwardsHusband, Davis, loves peas, butterbeans and cornbread, and chicken and dumplings. Her favorite is seafood and she cooks shrimp and grits a lot. She likes Mexican food, too.
Betty doesn’t like to cook a lot of sweets but if she is cooking one, her favorite is brownies, and she says the chocolate cake is wonderful.
She calls the polish sausage casserole a wonderful one-pot dish that she likes to have with slaw and cornbread.
The string bean casserole is a favorite of her family that they always ask for. Their family also includes two sons, Mark and Penny, and Mike and Laura.
Betty learned a lot about the basics of cooking from her mother, and how to can and cook more from her home ec classes.

Growing up in Webster County, they had a program in which the school home ec teacher would come into the students’ homes and help them with their projects.
For recipes, Betty watches Pioneer Woman, looks at Facebook and gets some from friends. She posts some on Facebook, and she loves Pinterest. And changing up a recipe doesn’t bother her.
She loves to roast vegetables. And she also likes to take zucchini, squash, onion and okra, mix it together, put it in flour, sprinkle it with water and a little more flour and then deep fry it.
The secret is not to stir it, just flip it. “The kids like it.”

String Bean Casserole
1 can French cut green beans, drained
1 can whole kernel can, drained
Layer in casserole dish.
Topping:
1-8 oz. sour cream
1 cup shredded cheddar cheese
1/2 cup onions, chopped
1 can water chestnuts, optional
Mix well and put on top of corn and string beans.
Take one roll of Ritz crackers and mix with 1 stick butter.
Place this on top of casserole. Bake at 350° until bubbly.

Butter Roll
1 cup milk
1 1/2 Tbsp. Crisco
3 cups self-rising flour
Mix well. Might have to add more flour if dough is not thick enough to roll out. Take dough and pinch into three balls. Roll each ball real thin, then take one stick butter and slice onto dough, then sprinkle with this with thin layer of sugar (one stick butter should be enough for all three balls.) After you place butter and sugar onto dough, roll into jelly roll and slice about 1-1 1/2” thick and place in deep pan or dish. Then add together: 4 cups milk, 2 Tbsp. vanilla flavoring, 1 cup sugar. Mix well and pour over rolls that have been placed in a deep fish. Bake at 350°until brown.

Fried Stuffed Deer Meat
8 pieces of tenderized deer meat
Cream cheese
Jalapeno peppers
Creole seasoning
Black pepper
Flour
Milk
Take meat and place a piece of cream cheese and jalapeno pepper in center. Season well. Roll up and put toothpick in center so it will hold together. Dip in milk, then in flour (put a little salt and pepper in flour.) Deep fry.

Brownies
4 eggs
1 cup oil
2 cups sugar
2/3 cup cocoa
2 tsp. vanilla
1 cup self-rising flour
Beat eggs, sugar and oil. Do not use electric mixer. Sift flour and cocoa, then add to mixture. Bake in a 9×13 pan at 350° for 20-30 minutes.

Polish Sausage Casserole
String beans, drained
Potatoes,  cubed
Carrots, sliced in rings
Onions, sliced
1 pkg. Polish sausage, cut in rings
Salt and pepper
Layer in this order. I make about two layers with vegetables, then top it off with the sausage. Put in big casserole pot. Add two cups water and cook on top of stove. Let water come to boil, then turn on low heat and cook until vegetables are tender.

 Coconut Pie
1 stick butter
1 1/2 cups sugar
3 eggs
1 Tbsp. vinegar
1 tsp. vanilla
1 cup coconut
Mix well and pour into unbaked deep dish pie crust. Bake at 350° for one hour.

Chocolate Cake
1 chocolate cake mix (devil food)
4 eggs
2 small pkg. chocolate instant pudding
1 1/2 cups water
1/2 cup oil
12 oz. chocolate chips
Mix liquids, then add to dry ingredients. Mix well, then fold in chocolate chips. Place in bundt pan. Bake one hour at 350°. Let cool. Sprinkle with powdered sugar.
