Award winning pies

Recipes released for award winning pies in Vardaman Sweet Potato Festival recipe contest.

1st Place Pie–
Chocolate Sweet Potato Turtle Pie

Crust: 1-3/4 cups crumbled Oreo cookies
3 tablespoons melted butter
Mix together and press into a 9 inch pie plate. Bake at 350° for 8-10 minutes. Cool.
Pie: 1 – 7 oz. bag caramels
1/4 cup evaporated milk
3/4 cup chopped pecans, divided
8 ounce cream cheese, softened
1/2 cup sour cream
1-1/4 cup milk
1 – 3.9 ounce package chocolate instant pudding mix
1 cup baked sweet potato
1/2 cup caramel topping
Whole toasted pecans dipped in chocolate for garnish
Place caramels and evaporated milk in a saucepan. Heat over medium low heat stirring until smooth. Stir in 1/2 cup chopped pecans. Pour into pie crust.
Combine cream cheese, sour cream, and milk. Beat until smooth. Add pudding mix and sweet potatoes and beat until smooth.
Pour pudding mixture over caramel. Cover and chill.
Drizzle caramel topping over pie and sprinkle with pecans.
Garnish with whole toasted pecans dipped in chocolate.

2nd Place Pie–
Mamie Eisenhower Sweet Potato Chiffon Pie

PIE CRUST
3 cups crushed Ginger Snaps
1 stick butter, melted
Pour melted butter over crushed ginger snaps, reserving enough butter to dip enough whole ginger snaps to go around pie plate. Place crushed ginger snaps in bottom of pie plate and whole ginger snaps around sides of pie plate. Bake in oven at 350 degrees 10-15 minutes. Set aside and cool.
PIE FILLING
3 beaten egg yolks
3/4 cup brown sugar
1-1/2 cups cooked, mashed potatoes
1/2 cup milk
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 envelope Knox Gelatin
1/4 cup cold water
3 stiffly beaten egg whites
1/4 cup granulated sugar
Combine egg yolks, brown sugar, sweet potato, milk, salt and spices. Cook in double boiler until thick, stirring constantly. Soak gelatin in cold water; stir into hot mixture. Chill until partly set. Beat egg whites, add granulated sugar, and beat until stiff. Fold into gelatin mixture. Pour into pie crust and chill until set. Garnish with whipped cream or Cool Whip.

3rd Place Pie–
Island Sweet Potato Pecan Pie

2 cups sugar
1 cup pureed sweet potatoes

1 tablespoon corn meal
1 tablespoon flour
5 eggs
Pinch of salt
Mix above ingredients together with mixer, then add:
1 cup chopped nuts
1 cup crushed pineapple, drained
1 cup flaked coconut
2 sticks of melted butter
1 prepared 9 inch deep dish pie crust and five 3 inch pie crust
Mix together with spoon, pour into a 9 inch pie shell and the 3 inch pie shells (these are perfect to freeze and have for individual pies later) and bake in preheated 300 degree oven for 50-60 minutes.
Remove from oven and cover crust with aluminum foil and bake another 15 to 30 minutes. (optional – after cooled, top with your favorite whipped topping, sprinkled with toasted coconut).
